I want to share this easy-peasy bagel recipe that’s low carb and vegan too to satisfy those crazy carb cravings without the actual carbs. It’s a great way to trick yourself into feeling like you’re having a carb-loaded bagel, when in fact you’re having a healthy snack loaded with healthy fats.
Bagel Recipe – Low Carb and Vegan Too
DRY INGREDIENTS:
1/2 cup ground flax seeds (or linseeds)
1/4 cup psyllium husks
3/4 tsp salt
WET INGREDIENTS:
1 cup warm water
1/2 cup tahini
ADDITIONAL OPTIONAL INGREDIENTS:
Everything but the Bagel seasoning from Trader Joes or onion salt with sesame seeds
METHOD:
Pre-heat oven to 375 degrees F (190C) and cover a baking tray with parchment (baking) paper
In a mixing bowl, mix together all the dry ingredients
In a blender, blend tahini and water briefly
Add wet ingredients to dry ingredients and stir until well-mixed and a dough forms
Separate dough into 6 equal balls and flatten each onto the baking tray. Poke a hole in the middle about 1 inch in diameter to create the bagel shape
Sprinkle on optional seasoning
Bake for 40 minutes until golden brown
You can slice them in half and toast them (delish) then spread with avocado or nut butter or pretty much anything you want. They are very satisfying on so many levels and ridiculously easy to make.
Store in an airtight container in the fridge.
